Blueberry Banana Pancakes

So you have ripe bananas

Did you know that recipe searches for banana bread are surging right now? Guess there’s many of us who buy a bunch of bananas and can’t get through them before they go dark. If you have just one overripe banana, this is a perfect ‘use what you have blueberry and banana pancake recipe. 


If you have more than one banana ready to go, we’ve got you, freeze them. It’s easy, just peel the bananas, break them in half and throw them in the freezer baggie.


Now to blueberry banana pancake recipe 

This recipe is really a ‘use what you have’ in your pantry and fridge recipe. One rule to follow. Make sure the total of dry to liquid ratio stays the same. Please feel free to switch things based on what you have. Meaning milk can be skim, whole, buttercream, almond, oat, etc. You can leave out the blueberries, and so on.

There are so many ways you can involve your little one in this recipe. There is a lot of mixing, and that is always fun! When it’s time to cook the pancake, this is an adult step. Always watch your little ones in the kitchen.

Blueberry Banana Pancake Recipe


  • 2 mixing bowls 
  • 1 small bowl
  • 2 mixing spoons
  • 1 fork or potato masher
  • Measuring cups
  • Measuring spoons
  • Spatula to flip
  • Non stick pan


  • ¾ cup flour
  • ½ cup almond flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 large ripe banana
  • 1 cup milk
  • 2 tablespoons soda water
  • 2 eggs
  • 2 teaspoons canola oil
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • Cooking spray
  • Maple syrup, strawberries for serving


Get the ingredients ready

All of em. 



Wash hands

Mash the banana

Try to get a good puree consistency.

Mix the dry ingredients

Measure out the ingredients with your little one.

Mix all the dry ingredients in one bowl.

Mix the wet ingredients

In a fresh bowl, mix all the wet ingredients.

Make sure the eggs get mixed up well.

Dry + Wet

Mix the dry and wet ingredients together and mix that all up.

This recipe has lots of mixing! Told ya!

Add the blueberries

Here is your last mixing task. Add the blueberries to the batter and mix it all together.

Be gentle to not break the berries.

Get ready to cook

This is a fast moving section.

Keep your child supervised if you decide to bring them in on this step. 

Have your spray oil at the ready.

Turn on the heat to medium and spray the pan.

Pour, Wait, Flip, Repeat

When the pan is hot (did you remember to spray?) add 1/2 cup of batter.

Wait 3 minutes and flip.

Wait 2 minutes.

Move the pancake to a plate and cover with foil.

Repeat this process until all the batter is gone. Remember to spray before you start each new pancake.
